Akira Back: the Hôtel Prince de Galles Paris opens its new restaurant

New year, new restaurant for the Hôtel Prince de Galles Paris. The five-star hotel, part of the Luxury Collection and a jewel of the Art Deco movement (which opened in 1929 on Avenue George V) opened the doors of its new restaurant this week, led by South Korean-born chef Akira Back. The namesake restaurant has been completely revamped to accommodate the starred chef’s cuisine, a modern Japanese cuisine with international influences. While Akira Back (real name Sung-Ook Back) already counts 16 establishments around the world, this is his very first restaurant in Europe. Born in South Korea and raised in the mountains of Aspen, Colorado, the chef went from extreme sports to the art of sushi with master Kenichi Kanada before going solo with his first restaurant in Las Vegas in 2008. A journey that allows him to shake up the codes of gastronomy, which he intends to do at the prestigious Prince of Wales. Transformed by the London interior design agency Blascksheep, the Akira Back restaurant creates a link between the East and the West in a sophisticated decor that honors handcrafted furniture and can accommodate up to 90 guests. The Akira Suite, a secret room reserved for twenty privileged diners, will welcome exceptional diners in a setting sublimated by the mural work of artist Young Hee Back, the Akira’s mother. For the inauguration of the restaurant, the hôtel had invited friends and Parisian influencers to discover this new Mecca of Parisian gastronomy.
