We’ve all heard about the mesmerizing cruises on the Norwegian fjords, hemmed in by multicoloured wooden houses set against lichen fields. From now on, it isn’t only for a nature experience but for a gastronomical one that you’ll go visit, as the fjords are also home to Iris, an egg-shaped metal building where chef Anika Madsen is creating the cuisine of tomorrow. It’s an ode to nature in all its forms, fully integrated into its surrounding aquatic entourage, as the building rests on the sea like some sort of floating orb. To reach it, you can take an (electric) boat to cross the raging waters of Hardangerfjord while you wonder what you’ll be able to taste.
